Chewy Granola Balls

Chewy Granola Balls (Makes about 30 Balls)
1/2 Cup Almond Butter
1/2 Cup Rice Syrup
1 Cup Rice Crispys
1 1/2 Cups Wee Granola (or your favorite store bought granola)
1/4 Cup Dried Cranberries, Cherries, Blueberries and/or raisins, chopped







1. Place the almond butter and rice syrup in a small saucepan over low to medium heat and warm for 2 minutes or until it becomes smooth and combined.
2. Place the remaining ingredients in a bowl and stir to combine.
3. Pour the warm almond butter mixture into the bowl with the granola mixture and stir to combine.
4. Roll into 1 inch balls (I used a mini ice cream scooper to scoop out each portion, but you could also use a tablespoon) .
5. Serve.

Ingredients

2 cups oven-toasted cereal squares 2 cups small pretzel twists 1 cup dry-roasted peanuts 1 cup (about 20) coarsely chopped caramels 2 cups (12-ounce package) NESTLÉ® TOLL HOUSE® Premier White Morsels 

Directions

SPRAY 13 x 9-inch baking pan with nonstick cooking spray.

COMBINE cereal, pretzels, peanuts and caramels in large bowl.

MICROWAVE morsels in medium, uncovered microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring until smooth. Pour over cereal mixture; stir to coat evenly.

SPREAD mixture into prepared baking pan; let stand for 20 to 30 minutes or until firm. Break into bite-size pieces.

Pretzel & Nut Mix: The Best Holiday Snack Ever

Spiced Glazed Nuts and Pretzel Mix
About 4 cups (300 gr)
Glazing the nuts with spices and adding a touch of sweetness, makes this the perfect nibble before dinner with an aperitif. I melt the butter in a large bowl, so I can do all the mixing in that bowl, making one less thing for me to wash as well.
Note that the salt is added after the nuts are stirred, so it doesn’t dissolve. And be sure to use coarse salt, which has an appealing, crunchy texture and more delicate flavor than ordinary table salt.
2 cups (200 gr) mixed raw nuts (untoasted); any combination of cashews, whole almonds, peanuts, pecan halves, and hazelnuts
1 tablespoon (15 gr) unsalted butter, melted
3 tablespoons (45 gr) dark brown sugar
1/2 teaspoon ground cinnamon
3/4 teaspoon cayenne pepper (or another red pepper)
1 1/2 tablespoons maple syrup
1 teaspoon flaky sea salt or kosher salt
2 cups (100 gr) small pretzel twists
1. Spread the nuts on a baking sheet and roast in a 350F (180C) oven for 10 minutes, stirring once for even toasting.
2. In a medium bowl, mix together the melted butter, brown sugar, cinnamon, cayenne, and maple syrup.
3. Add the warm nuts, stirring until coated. Then mix in the salt and pretzels, and stir until the nuts and pretzels are completely coated.
4. Spread the mixture back on the baking sheet and return to the oven for 12-18 minutes, stirring twice during cooking. Remove from oven and cool completely, separating the nuts and pretzels as they cool.
Once cool, this mixture can be stored in an airtight container for up to a week.

Indoor S'mores

8cups Golden Grahams® cereal
5cups miniature marshmallows
1 1/2cups milk chocolate chips
1/4cup light corn syrup
5tablespoons butter or margarine
1teaspoon vanilla
1cup miniature marshmallows, if desired



  1. Into large bowl, measure cereal. Butter 13x9-inch pan. In large microwavable bowl, microwave 5 cups marshmallows, the chocolate chips, corn syrup and butter uncovered on High 2 minutes to 3 minutes 30 seconds, stirring after every minute, until melted and smooth when stirred. Stir in vanilla.
  2. Pour over cereal; quickly toss until completely coated. Stir in 1 cup marshmallows.
  3. Press mixture evenly in pan, using buttered back of spoon. Let stand uncovered at least 1 hour, or refrigerate if you prefer a firmer bar. For bars, cut into 6 rows by 4 rows. Store loosely covered at room temperature up to 2 days.

Warm Peanut Butter & Jelly Dip

Ingredients

1 package (8 oz.) cream cheese, softened
2/3 cup Skippy® Natural Creamy Peanut Butter Spread
1/3 cup seedless raspberry jam

Preparation

  1. Layer cream cheese, Skippy® Natural Creamy Peanut Butter Spread and jam in 1-quart microwave-safe bowl. Microwave at HIGH 1 minute or until heated through.
  2. Serve, if desired, with apple slices and graham cracker sticks. 

    Tip: May be baked in preheated 350° oven for 20 minutes.

Reindeer Feed

Ingredients
6 cups Rice Chex® or Chocolate Chex® cereal
1 bag (12 oz) white vanilla baking chips (2 cups)
1/3 cup coarsely crushed peppermint candy canes (14 miniature, unwrapped)

Directions
1. Line cookie sheet with foil or waxed paper. Place cereal in large bowl.

2. In microwavable bowl, microwave white vanilla baking chips uncovered on High about 1 minute 30 seconds, stirring every 30 seconds, until chips can be stirred smooth. Stir in half the crushed peppermint candy.

3. Pour over cereal; toss to evenly coat. Spread mixture in single layer on cookie sheet. Immediately sprinkle with remaining candy. Let stand until set, about 20 minutes. Gently break up coated cereal. Store in airtight container.

Tip: To make feed bag, cut two 6 1/2 x 5-inch rectangles from a piece of muslin-type fabric. Using a hot glue gun, run a bead of glue on edge of three sides of one rectangle. Top with other rectangle to form pocket. Turn pocket inside-out. Roll down top opened edge to create a cuff.
