Turkey 'Balls'

  • 4 Cooked turkey breast, cut into small bite sized pieces or shredded
  • Large bowl of Mashed potatoes (instant or homemade)
  • 1 pkg of Turkey stuffing, made according to pkg
  • 1 large bag Corn (frozen, but cooked)
  • 1 container of bread crumbs
  • 1 bottle of peanut oil (vegetable oil works too, but peanut tastes better)
  • Deep Fryer (optional, if you do not have one, use a deep sauce pan)

Preheat your fryer, or pan with oil.

In a large bowl combine the turkey, potatoes, stuffing and corn. Mixture will be sticky and thick. Make balls of the mixture, a little smaller than a fist.

 In a shallow bowl, or deep plate, spread out the bread crumbs.  When oil is ready, roll the mixture balls in the bread crumbs and then put in oil, fry for appx 1min or until they are golden brown.

Serve with green bean casserole and gravy for a "traditional" turkey dinner.

Ingredients

2 cups oven-toasted cereal squares 2 cups small pretzel twists 1 cup dry-roasted peanuts 1 cup (about 20) coarsely chopped caramels 2 cups (12-ounce package) NESTLÉ® TOLL HOUSE® Premier White Morsels 

Directions

SPRAY 13 x 9-inch baking pan with nonstick cooking spray.

COMBINE cereal, pretzels, peanuts and caramels in large bowl.

MICROWAVE morsels in medium, uncovered microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring until smooth. Pour over cereal mixture; stir to coat evenly.

SPREAD mixture into prepared baking pan; let stand for 20 to 30 minutes or until firm. Break into bite-size pieces.

Ingredients

Ice cubes 1/4 cup espresso 2 tablespoons any flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer 2 tablespoons vodka 1 tablespoon coffee liqueur (optional) 

Directions

FILL cocktail shaker halfway with ice. Add espresso, Coffee-mate, vodka and liqueur; cover. Shake for 10 to 15 seconds. Strain into chilled martini glass.

NOTE: Try garnishing the rim of the martini glass with grated chocolate. Coat the rim with honey, then dip in grated chocolate.

Holiday Chocolate-Mint Pie

INGREDIENTS:

Pillsbury® Pet-Ritz® frozen deep dish pie crust

box (4-serving size) chocolate pudding and pie filling mix (not instant)

cup semisweet chocolate chips

cup whipping cream

teaspoon peppermint extract

tablespoons crushed red, green and white hard peppermint candies

DIRECTIONS:
  • Heat oven to 400°F. Bake pie crust as directed on package for One-Crust Baked Pie Shell. Cool completely, about 30 minutes.
  • Meanwhile, in 2-quart saucepan, stir together 1 1/4 cups milk and pudding mix; cook over medium heat as directed on box. Reduce heat to low; continue cooking while adding chocolate chips, stirring until melted. Set aside.
  • In 3-quart saucepan, heat 1/2 cup milk and marshmallows over low heat, stirring constantly, just until marshmallows are melted. Refrigerate about 30 minutes, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
  • In chilled medium bowl, beat whipping cream and peppermint extract on high speed until stiff. Gently stir in marshmallow mixture. Gently stir in 1/4 cup of the crushed candies.
  • Spread chocolate mixture in cooled shell; top with whipped cream mixture. Refrigerate until set, about 4 hours. Just before serving, sprinkle remaining 2 tablespoons crushed candies on top. Store covered in refrigerator.

The Best Dinner Rolls – Soft, Sweet Bread!

INGREDIENTS
  • 1 envelope Active dry yeast
  • 1/4 cup very warm water
  • 1/3 cup sugar
  • 1/4 cup butter
  • 1 teaspoon salt
  • 1 cup scalding hot milk
  • 1 egg –lightly beaten
  • 4 1/2 cups of sifted all purpose flour
  • 2 Tablespoons of melted butter for brushing rolls
DIRECTIONS
Sprinkle the yeast over very warm water in a large bowl.  (warm water should feel comfortably warm when dropped on wrist)  Stir until yeast dissolves.
Add sugar, the 1/4cup butter and salt to hot milk and stir until the sugar dissolves and butter is melted.  Cool mixture to 105 to 115 degrees.
Add milk mixture to yeast, then beat in egg.  Beat in 4 cups of flour, one cup at a time to form soft dough.  Use some the remaining 1/2 cup flour to dust a pastry cloth.  Knead the dough lightly for 5 minutes, working in the remaining flour (use if for flouring your cloth and hands).
Place dough in a warm buttered bowl; turn greased side up.  Cover and let rise in a warm place until doubled in bulk, about 1  1/2 hrs.
Punch dough down and knead 4 to 5 minutes on a lightly floured pastry cloth.  Dough will be sticky, but use as little flour as possible for flouring your hands and the pastry cloth, otherwise the rolls will not be as feathery light as they should be.
Pinch off small chunks of dough and shape into round rolls.  Place in neat rows, not quite touching, in a well-buttered 13x9x2 pan. Cover rolls and let rise in warm place until doubled, 30-45min.
Brush tops of rolls generously with melted butter, then bake in a 375′ oven for 18-20minutes or until nicely browned.
Serve warm with plenty of butter.  I pour melted butter on top of the rolls right when the come out of the oven.
Recipe makes about 2 dozen!
I served up my rolls in my brand new, very pretty Tuscan Everyday Baker.  I love that color!

TEDDY GRAHAMS-Cinnamon Cookie Balls

what you need

1 pkg. (8 oz.) PHILADELPHIA Honey Nut Flavor Cream Cheese Spread
2-1/3 cups  TEDDY GRAHAMS Cinnamon Graham Snacks, finely crushed (about 1-1/2 cups)
1-1/2 pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate (12 squares), melted
1/2 cup  cinnamon red hot candies, crushed

make it

MIX cream cheese and graham crumbs until well blended.
SHAPE into 24 (1-inch) balls. Dip in chocolate; place in single layer in shallow waxed paper-lined pan. Sprinkle with crushed candies.
REFRIGERATE 1 hour or until firm.

HOW TO EASILY DIP BALLS
To easily coat balls with the melted chocolate, add balls, in batches, to bowl of melted chocolate. Use 2 forks to roll balls in chocolate until evenly coated. Remove balls with forks, letting excess chocolate drip back into bowl. Place balls in prepared pan; let stand until firm.
HOW TO STORE
Store in tightly covered container in refrigerator.

  • 1 package semi-sweet chocolate chips (12 ounces)
  • 1/2 cup butter
  • 1 cup walnuts orpecans, chopped
  • 1 bag mini colored marshmallows (10-12 ounces)
  • 1 bag shredded, sweetened coconut (14 ounces)
PREPARATION
Melt the chocolate chips and butter in a large saucepan over low heat (or in a microwave in a microwave-safe bowl). Stir until smooth and let cool to room temperature. Add the marshmallows and nuts and mix until combined.
 
Using wax paper, shape the mixture into two or three 1 1/2-2 inch round logs. Roll each log in coconut and shape firmly in wax paper. Wrap securely in the wax paper and freeze overnight. While still frozen, slice each log, with the wax paper still wrapped, into 1/2-1-inch slices. Remove the wax paper and enjoy.

Assemble the pieces of the salad and sprinkle the coconut.
What you need:
  • Green Pear
  • Celery sticks
  • Red Apple
  • Carrot slice
  • Coconut (optional)
  • JuJubee Candies
Cut a slice of pear from one side of the pear and then trim off lengthwise edges to form a tree trunk. Leave peel on. From a slice of the apple, with peel, cut a pot for the tree. Celery stick should be cut into thin strips, making an angled end cut so tree "branches" fit flush with the trunk. Use a carrot slice to make a small bird that will top the tree. Assemble each tree on a plate, using either carrot "ornaments" or little colored JuJubee candies. If using coconut, sprinkle along the bottom edge of the plate for "snow".

Fun-to-Eat Snowman Pizza for Picky Eaters

Roll dough, make snowman and add sauce, cheese and pepperoni.
What you need:
  • Dough
  • 3 1/2 Cups whole wheat flour
  • 1 Cup white flour
  • 2 Tsp. active dry yeast
  • 1 Tsp. sugar
  • 1 1/4 Tsp. salt
  • 1 1/2 Tsp. olive oil
  • 1/4 Tsp. garlic powder
  • 2 Cups water
  • 1/4 Cup grated parmesan cheese
Other ingredients:
  • Tomato sauce
  • Mozzarella cheese
  • Pepperoni
  • Capers
  • Carrot
  1. Mix dry ingredients in a large bowl. Slowly add water, a little at a time, knead until dough is firm and smooth. Using olive oil, grease bowl and place dough ball in bowl, turning once so all surfaces are oiled. Cover with a cloth or plastic wrap and let rise in a warm spot until double in size, usually about 2 hours.
  2. Place dough on a well-floured surface and roll dough to about 1/4 inch thick. Cut out three different sizes to form each snowman, by hand or using pastry cutters. Assemble snowman on baking pan, attaching "balls" by pressing together. Add sauce, cheese and Snowman decorations. Cut pepperoni into scarves, piecing two pieces together, if necessary. Make noses by cutting tiny carrot triangles.

Cinnamon-Sugar Cookies

Buttery and sweet with a hint of spice, these cookie jar favorites are right for any occasion. If you prefer a slightly chewier cookie, reduce baking time to 10 minutes. A sprinkling of large-grained turbinado sugar makes a pretty presentation to attract buyers.

Ingredients

  • 1  cup  granulated sugar
  • 6  tablespoons  butter, softened
  • 1  tablespoon  light corn syrup
  • 1  teaspoon  vanilla extract
  • 1  large egg
  • 1  cup  cake flour (about 4 ounces)
  • 3/4  cup  all-purpose flour (about 3 1/3 ounces)
  • 1  teaspoon  baking powder
  • 1  teaspoon  baking soda
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  ground cinnamon
  • 1/4  cup  turbinado sugar
  • 1/2  teaspoon  ground cinnamon

Preparation

Place granulated sugar and butter in a bowl; beat with a mixer at medium speed until well blended (about 3 minutes). Add corn syrup, vanilla, and egg; beat 3 minutes or until well blended.
Lightly spoon cake flour and all-purpose flour into dry measuring cups; level with a knife. Combine flours, baking powder, baking soda, salt, and 1/4 teaspoon cinnamon. Add flour mixture to butter mixture; stir until just combined. Wrap in plastic wrap; chill 1 hour.
Preheat oven to 375°.
Combine turbinado sugar and 1/2 teaspoon cinnamon in a small bowl. Shape dough into 48 balls, about 1 teaspoon each. Roll balls in cinnamon-sugar mixture. Place 2 inches apart on ungreased baking sheets. Bake at 375° for 12 minutes or until golden on bottom. Cool on wire racks.
